Vegetarians are celebrating! October 1st is World Vegetarian Day, kicking off Vegetarian Awareness Month, with World Vegan Day rounding out the month on the first of November.
Vegetarian Awareness Month was established by the North American Vegetarian Society in 1977. You can make a difference this October by telling your friends and family about the benefits of vegetarianism, and encouraging them to try out a vegetarian diet, which can have health advantages.
Vegetarians typically do not eat meat, poultry, fish, or the flesh of any animal. Vegetarianism can also extend to abstaining from various animal by-products.

Celebratory Recipe: Easiest Vegetarian Sweet Potato Wedges for Fall
2 large sweet potatoes
2 tbsp olive oil
1-2 tbsp spice (chili, curry, paprika, or whatever you like)
Preheat oven to 400 degrees Fahrenheit. Slice the sweet potatoes lengthwise into wedges, about one inch thick in the middle. Throw potatoes into a large metal bowl, drizzle with olive oil, and toss while adding your spices – we chose a blend of chili, curry, and paprika. Spread wedges onto a large baking sheet and bake until cooked (about 35 minutes).
