- 1 teaspoon olive oil
- 2/3 cup marinara sauce

- Combine bread crumbs and parmesan in shallow bowl. Combine butter and olive oil in small bowl.
- Brush chicken breasts with butter and oil and then dip chicken breasts into the breaded mixture.
- Place chicken on baking sheet and bake in preheated oven at 450° for 20 minutes.
- Heat marinara sauce over medium heat for 2 to 3 minutes and then add the baked chicken to the skillet.
- Top chicken with 1½ tablespoons of mozzarella cheese and cover pan until cheese melts.
- Serve over your vegetable noodle of choice.
